The Chef’s story began in Chile, where he trained in the art of sushi. Guided by his passion for travel, he refined his culinary style, drawing inspiration from flavours he encountered around the world. In Monaco, he spent time alongside the MayaBay chefs to understand their philosophy. When he joined Porto Montenegro in 2024, he knew this fusion of cultures was his next chapter.
At MayaBay Porto Montenegro, excellence is built quietly. “We work closely with suppliers to find the finest products”, says the Chef. Everything is crafted with care and precision, even something as simple as a gyoza. “On top of that, we stay in constant dialogue with our Monaco team to refine dishes, enhance presentation, and introduce new techniques.”
It is all about balance, respecting tradition while also being creative and playful. Thai and Japanese cuisines have very different identities, but when combined the right way, they create something unique. “My vision is for MayaBay to be the place in Montenegro where guests can explore that harmony in every dish.”
Each season sparks creativity in the MayaBay kitchen. Mango adds sweetness to curries, freshness to sushi, and silkiness to desserts. Among the Chef’s favourites is Tuna Nikkei Ceviche — soy, ponzu, lime, and tuna in pure harmony.
