Inside, there reigns a warm, comforting atmosphere thanks to very colourful decor of Himalayan and Tibetan inspiration, signed by architect Sylvestre Murigneux of Hong King, already laying claim to Le Refuge de la Traye. The dining-room (150 seats) is also remarkable for its imposing Charcoal Grill, its butcher's chopping block, and its meat maturing cellar.
"Maya Altitude proposes multicultural bistronomic cuisine inspired by the Near East and Asia, with a selection of signature dishes from the restaurants MayaBay, Maya Jah and Maya Mia in Monaco – with a nod and a wink to specialities from Savoy," explains Stéphane Desprez, the restaurant's Chef. The result? Perfectly mastered fusion, highlighting both local and exotic flavours. Two exceptional cooking techniques are also given a place of honour at the Maya Altitude: the Charcoal Grill and a terra-cotta tandoori oven. "We switch on the oven two hours before it is used. Whether heated by charcoal or gas, its temperature attains 300 degrees. It is used to cook skewered meat, fish or vegetables," says the Chef. Bringing out the purity of their taste, these two techniques are proposed when ordering your dishes.
