In joining the Maya Collection, star-rated Chef Akrame leaves his culinary imprint on the menu of La Table de la Traye and Le Maya Altitude. 
How did your collaboration with the Maya Collection begin?

I met Jean-Victor Pastor thanks to a friend we have in common. I was immediately drawn to his project and I literally fell in love with Le Refuge de la Traye which, in my opinion, embodies the future of the hotel industry. This partnership is above all a tale about human beings, but also entrepreneurs.

What is your role?

That of a consultant. When creating a menu, I take inspiration from the setting, but also the clientele. That is what I did for Le Refuge de la Traye and Le Maya Altitude.

Tell us more about the dishes you concocted for La Table de la Traye.

They are creations that are totally coherent with Le Refuge, such as Fish of the Day steamed with a fir-tree fragrance, Liquorice Veal or Mont Chocolaté with Savoy biscuit. The idea is to convey the atmosphere of the mountains, warmth, but also gourmet delicacies. 

And for Le Maya Altitude?

The challenge here was to understand the needs of skiers, fans of gastronomy, children. I thus aimed for a menu that would please the largest number of guests, revolving around grills and dishes for sharing, in the hope of making Le Maya Altitude a must address in Les 3 Vallées.
